Arugula, Chinchin & Radicchio Salad.

Yield: 6 servings   Level: Easy

 

Ingredients

8oz Baby Arugula

1/2 head of Radicchio (torn into bite size)

2 carrots

1/2 Cup   Snackin’ African Chinchin

¼ Cup Halved Cherry Tomatoes (if desired)

2 TBSP of Balsamic vinaigrette (see recipe below)

 

Balsamic Vinaigrette:

1 cup Extra Virgin Olive Oil

1/3 Cup Balsamic vinegar

1 teaspoon honey

 

Directions

For vinaigrette- Whisk together all ingredients thoroughly and store in refrigerator.

To make salad- Pour all the ingredients in a bowl, then drizzle balsamic vinaigrette and toss until well mixed and taste and adjust for seasoning.
